Refrigerator Rolls

These are the classic rolls for a holiday dinner. When it was suggested that we just make something simpler for this Thanksgiving, Gabrielle was not too happy! So we made time and made sure these were part of the meal. The nice thing is that the dough is made ahead. Then you can roll out and roll up into crescents while watching Macy's Thanksgiving Day parade.

1. Combine 2 pkgs dry yeast, 1/4 cup lukewarm water, and 1 Tbsp. Sugar.
2. Heat & Cool : 1 cup water, 1/2 cup shortening, 1/2 cup sugar, and 1 tsp salt.
3. Beat 3 eggs until fluffy


Combine 1, 2, and 3.
Add 4 1/2 cups flour. Stir and let rise for 1 hour. Punch down and refrigerate overnight. Spread shortening over the top.

Divide dough into thirds. Roll out brush with melted butter and make into rolls. Allow to rise 3 hours on trays. Bake 6 – 10 minutes at 400°. Delicious warm from the oven!
