Beef Stick Salami

Mom requested this recipe be posted. I copied it from a booklet of collected recipes from the book club mom attended. Mom-- please comment on where this recipe came from originally. My memory of this recipe is taking it in my lunch in elementary school and teachers being amazed that it was homemade. It is great with cheese and crackers.

5 lb. lean ground beef
2 1/2 tsp coarse ground pepper
2 1/2 tsp liquid smoke
4 Tbsp curing salt
2 1/2 tsp mustard seeds
1 tsp garlic salt

Mix well. Cover container and place in refrigerator for 4 days. Each day take out and knead for 5 minutes. On the 4th day, knead for 5 minutes and form into 2 long loaves like salami. Place on broiler pan and bake in 160° oven for 9 hours. Chill well before slicing.

  1. Now THAT'S the food of the world people! If I was stranded on an island, and could take only one food, that would be the food! YUMMM!
